Preheat oven to 205C/400F/Gas Mark 5
Line your pan with aluminum foil and lightly brush with some of the rapeseed oil..
Finely chop the parsley then combine the salt, pepper and breadcrumbs in a shallow plate. Coat each fillet with the oil. Press the fillet into the crumb mixture. Place fillets in baking dish, crust-side up.
Bake for 10 minutes. Turn fillets; bake 5 to 10 minutes longer or until fish flakes easily with fork. Place fillets on serving platter; garnish with lemon wedges.
We only use fish from Daly's Seafood where the fish is so fresh.
